Part of the massive renovation and conversion of the Montauk Yacht Club on Star Island into a Gurney’s property was the total makeover of its signature restaurant, which is now overseen by chef Jeremy Blutstein. Diners choose their catch from a seafood display and the menu is focused on vegetables and fish. Over 10 farms, foragers, and fishing vessels are credited on the menu, which includes a house dry-aged bone-in tuna ribeye, NY strip loin, and lamb saddle.
